What is Shakshouka?

This delicious breakfast is commonly eaten across the Magreb region. At its base, it is made from a spiced tomato sauce, gently poached eggs and accompanied with bread for dipping. The dish is healthy and delicious and different toppings can be added such as feta or avocados. 

Shakshouka is perfect as a weekend morning breakfast and is the perfect warm, comforting breakfast to wake up to on a lazy day!

Equipment

  • 1 small cast-iron skillet

Ingredients
  

  • 1 tbsp olive oil
  • 1/2 white onion
  • 1/2 red bell pepper
  • 1 green chilli
  • 3 medium tomatos
  • 1/4 tsp salt
  • 1 tbsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 2 eggs
  • 1/4 cup Fresh parsley
  • 1/2 avocado
  • Small pita bread

Instructions
 

  • Add olive oil to a cast iron skillet.
  • In skillet, sauté chopped onion, garlic, green chilli and bell pepper until soft.
  • Add chopped garlic and stir for 1 minute.
  • Add chopped tomatoes and crush slightly to loosen. Leave to cook on medium heat for about 6-8 minutes.
  • Add spices and salt.
  • Create 2 wells and pour eggs over. Cook until egg whites are hard.
  • Top with chopped parsley and serve with some avocado and bread of choice.
