Egusi Scramble

 If you’re vegan and need an egg replacement that’s not tofu, you’re gonna like this one.

Ingredients

  • 100 grams ground egusi
  • 1 cup water
  • 2 garlic cloves
  • Salt
  • 1 tbsp sunflower oil

Instructions

  • Add egusi, water and ground garlic to a bowl and mix. (The consistency should be medium thickness. Add extra water if needed.
  • Add sunflower oil to a pan on a medium heat and add your egusi mixture.
  • Let sit for 1 minute to begin to firm then stir to scramble until cooked.
