Egusi Scramble
If you’re vegan and need an egg replacement that’s not tofu, you’re gonna like this one.

- 100 grams ground egusi
- 1 cup water
- 2 garlic cloves
- Salt
- 1 tbsp sunflower oil
Add egusi, water and ground garlic to a bowl and mix. (The consistency should be medium thickness. Add extra water if needed.
Add sunflower oil to a pan on a medium heat and add your egusi mixture.
Let sit for 1 minute to begin to firm then stir to scramble until cooked.
