Plantain Waffles

Ingredients

  • 1 plantain ripe
  • 1 tsp ginger grated
  • 1/2 cup flour oat/quinoa/almond/wholewheat
  • pinch salt
  • 1/2 tsp nutmeg
  • 1 egg beaten
  • coconut oil to grease the waffle maker

Instructions

  • Mash your plantain until it is a smooth texture.
  • Mix the rest of your ingredients into the plantain (apart from the coconut oil).
  • Grease your waffle maker with your coconut oil and add your mixture.
  • Cook until the waffle is golden brown.
  • Serve with your favourite toppings (either sweet or savoury) and enjoy! x
