  • 2 cups water
  • 1/4 cup hibiscus leaves

Egusi Scramble

  • 1 cup egusi ground
  • 1 cup water
  • Salt to taste
  • 1 garlic clove
  • 1 tbsp parsley dry
  • 1 tsp oil

Moringa-Infused Fava Bean Cakes

  • 1 cup fava beans
  • 2 tbsp flour
  • 1/8 red onion
  • 1 tsp parsley
  • 1 tbsp moringa
  • 1/2 tsp cumin
  • 1/2 tbsp paprika
  • Salt to taste
  • 1 1sp olive oil for cooking

North African-Inspired Salad

  • 1/2 cup cucumber
  • 1 tomato
  • 1/8 red onion
  • 1/2 lemon
  • 1/4 cup parsley leaves
  • 1 garlic clove

Groundnut/peanut paste

  • 1 tbsp peanut butter
  • 1 tbsp olive oil
  • 1/2 tsp chilli powder
  • 1 garlic clove

Toasted Melon Seeds

  • 1/8 cup melon seeds

Spinach

  • 2 cups spinach
