Egyptian Shakshouka
A protein-rich Egyptian breakfast that will surely become a staple in your home!

- 1 tbsp olive oil
- 1/2 white onion
- 1/2 red bell pepper
- 1 green chilli
- 3 medium tomatos
- 1/4 tsp salt
- 1 tbsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 2 eggs
- 1/4 cup Fresh parsley
- 1/2 avocado
- Small pita bread
Add olive oil to a cast iron skillet.
In skillet, sauté chopped onion, garlic, green chilli and bell pepper until soft.
Add chopped garlic and stir for 1 minute.
Add chopped tomatoes and crush slightly to loosen. Leave to cook on medium heat for about 6-8 minutes.
Add spices and salt.
Create 2 wells and pour eggs over. Cook until egg whites are hard.
Top with chopped parsley and serve with some avocado and bread of choice.
