Egyptian Shakshouka

Equipment

  • 1 small cast-iron skillet

Ingredients

  • 1 tbsp olive oil
  • 1/2 white onion
  • 1/2 red bell pepper
  • 1 green chilli
  • 3 medium tomatos
  • 1/4 tsp salt
  • 1 tbsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 2 eggs
  • 1/4 cup Fresh parsley
  • 1/2 avocado
  • Small pita bread

Instructions

  • Add olive oil to a cast iron skillet.
  • In skillet, sauté chopped onion, garlic, green chilli and bell pepper until soft.
  • Add chopped garlic and stir for 1 minute.
  • Add chopped tomatoes and crush slightly to loosen. Leave to cook on medium heat for about 6-8 minutes.
  • Add spices and salt.
  • Create 2 wells and pour eggs over. Cook until egg whites are hard.
  • Top with chopped parsley and serve with some avocado and bread of choice.
