Yes, you read correctly…PLANTAIN WAFFLES!

As you all know, I love plantain!  Plantains are high in fibre and are great for weight management, digestive health and heart health. They are also high in antioxidants which help to protect against heart disease and certain types of cancer.

These waffles are so easy to make and versatile as they can be eaten savoury or sweet, for breakfast, lunch, dinner or as a snack!

Without further ado, here’s the recipe!

Plantain Waffles

  • 1 ripe plantain
  • 1 tsp grated ginger
  • 1/2 cup flour oat/quinoa/almond/wholewheat
  • pinch salt
  • 1/2 tsp nutmeg
  • 1 egg beaten
  • coconut oil to grease the waffle maker

  • Mash your plantain until it is a smooth texture.
  • Mix the rest of your ingredients into the plantain (apart from the coconut oil).
  • Grease your waffle maker with your coconut oil and add your mixture.
  • Cook until the waffle is golden brown.
  • Serve with your favourite toppings (either sweet or savoury) and enjoy! x
